Owner Kevin Blakeslee describes it as "seasonal Asian comfort food."

There are always dumplings on the menu, but Blakeslee chose to open a food truck so he can make different items all the time, like Spam fried rice.

Nishi means "west" and it's also part of Blakeslee's mother's family name. He says he wouldn't have been able to start the business without the help of his mother and grandmother.
